Nella scelta della vacanza invernale incide sempre più la qualità dell’offerta legata alla gastronomia, alla ristorazione e ai cibi che esprimono il territorio, tanto che oltre il 90% dei turisti ha intenzione di unire le discese a esperienze enogastronomiche sul territorio. A dirlo è l’anticipazione dell’edizione 2023 del Rapporto sul turismo enogastronomico italiano, a cura di Roberta Garibaldi, che per la prima volta ha analizzato le attese e le propensioni di spesa del turista che sceglie la montagna come destinazione per le proprie vacanze.
Secondo il rapporto quasi il 70% degli intervistati vuole visitare un ristorante locale per degustare i piatti tipici del luogo prescelto e più di uno su quattro ha previsto la visita a un ristorante o un bar storico durante la permanenza in montagna. Circa due turisti su tre desiderano inoltre visitare i luoghi di produzione del cibo, con aziende agricole in testa (24%), seguite da caseifici (23%) e cantine (22%).
Tra le altre esperienze compaiono la visita a un mercato locale, scelta da oltre il 40% del campione, e alle piccole botteghe artigiane del gusto, con oltre il 37%. Inoltre, più del 57% degli intervistati punta a partecipare a un evento legato all’enogastronomia, meglio se focalizzato su cibo e, a seguire, vino e birra. Tra le esperienze di turismo attivo, invece, svettano quelle dei trattamenti di benessere a tema vino, birra e olio. Tra i più giovani (età 18-24) è particolarmente alta l’intenzione di partecipare ad attività sportive all’aria aperta come trekking del gusto, tour in bicicletta o mountain bike tra i luoghi di produzione del cibo.
“Il binomio enogastronomia e montagna si conferma essere di grande appeal tra i turisti italiani, l’interesse è forte e si traduce nel desiderio di partecipare ad una pluralità di proposte, dalle più tradizionali ai nuovi format tra sport e gusto – afferma l’autrice Roberta Garibaldi – Valorizzare l’enogastronomia nelle aree montane del Belpaese contribuisce ad arricchire l’offerta, la diversifica e la destagionalizza. È certamente un’opzione percorribile per slegarsi dai tradizionali modelli turistici ed orientarsi verso forme di sviluppo più sostenibili e in grado di generare benefici diffusi per le filiere dell’agroalimentare e del turismo”.
